Banana & Fudge Muffins recipe

Ingredients (9-12 muffins)

250g self-raising flour

1 teaspoon baking powder

100g soft light brown sugar

50-100g fudge* pieces (less for less sweet)

80g melted butter ( melt in microwave or in a saucepan on the hob)

125ml milk

1 level teaspoon vanilla essence

2 large eggs

2 large bananas preferably ripe

Small amount of runny clear honey for glaze or icing sugar or icing for decoration.

 Oven

Heat fan oven to 190 degrees. 

 Utensils

Scales

Seive 

2 bowls & a jug or 3 bowls

Saucepan or microwave dish

Forks/whisk/ spoons / spatula

Muffin tray

Paper muffin cases 

Method

Mix together the dry ingredients (sugar, flour & baking powder) but seive the flour and baking powder before adding to the bowl. 

Add the fudge and stir into the dry mixture.

Mix the wet ingredients (melted butter, milk & vanilla essence) in a jug or bowl.

Beat together the eggs in a bowl. 

Mash the bananas in a bowl to which you will add the beaten eggs.

Pour the eggs into the bananas and mix well together.

Add the wet ingredients to the dry ingredients mixing them together well and then add in the banana and egg mixture. Once again mix together thoroughly.

Use a spoon or small ladle to divide the mixture between the paper cases. This can be 9-12 depending on the size of your cases and whether you prefer them to be higher or not. 

Bake them for 20 minutes on a middle shelf.

If glazing with honey then allow to cool for a couple of minutes as the heat helps melt the honey. If using other decoration allow the muffins to cool first.

*You can replace fudge with toffee pieces or chocolate drops or pieces of nuts.

However, please be aware that we do serve fish and meat and cannot guarantee that there will be no cross contamination as we have a very small kitchen and are limited in storage space preventing us from having separate mixers, blenders,cooking pots, pans and utensils,

If you are a strict Vegan or Vegetarian please make the decision to eat at Chamomile knowing that we are not exclusively serving vegan or vegetarian dishes.

Allergens

We are very aware how important it is for those with an intolerance or allergy to take the best care they can to protect themselves.
Our son has a nut allergy and so our kitchen is well versed with taking into account allergies. However, we have a very small kitchen and cannot guarantee avoidance of cross contamination. It has to be a personal decision based on how allergic somebody is as to whether it would be ok for them to eat at Chamomile.

So please ALWAYS advise us of your allergies and our chefs will do their best to avoid cross contamination but please remember that our kitchen is not nut free or gluten free.

We are very pleased to be supporting both Belsize Community Library & The Winch a very worthy charity helping children irrespective of their circumstances, the support and opportunities they need and desire.

When you book a children’s birthday party at BCL, you can also book the catering for the vent with Chamomile. We have a choice of 4 menus plus a range of treats for the adults. We will deliver to the library at your chosen time.

Different counter specials every day. These normally consist of a hot dish and a selection of at least 3 salads . Our popular dishes range from our housemade tasty meatballs , juicy lamb kebabs to our delicious fishcakes.
